This is for people like me who cannot eat the vegetables raw. Of course, for anyone who can eat it as is, cooking is not required. Cooking for a few minutes softens the vegetables and also retains the crunch. This is generally what I have with a roti for breakfast.
Ingredients:
- Cucumber diced - 2 cup
- Onion - 1/2 cup diced
- Chilli - 1 Chilli/ to taste
- Tomato - 1/2 cup diced
- Sprouts - 1/2 cup
- Chat Masala - 1/4 tsp
- Add everything in a pan and cook on medium for 3-4 minutes.
- Serve hot with chapathi.
Notes:
- You can add oil and season it before adding the vegetables. The curry can be cooked longer if desired too.
- I pulsed chick pea sprouts in blender for a few seconds before adding to the dish. Mung sprouts can be added as is.
